Bean Enchiladas/Mexican Recipes/Easy mexican Recipes

Enchilada mean a corn tortillas(falt corn bread) wrapped in different filling like bean ,veg ,meat ,cheese and covered with sauce .I have made bean enchilada with tomatillo sauce.
There are three preparation in this recipe .One is stuffing (beans) next is sauce preparation (tomatillo sauce) next is assemblying .I am going to concentrate on filling and assembly in this post .Sauce ,i will explain it in my next post.
 I already mentioned many times our liking towards mexican cuisine -for its similarity to indian cuisine , there are many meatless option too that is a special reason why i love mexican cuisine.

I normally do

  1. Soups
  2. Quesadilla
  3. Enchilidas
  4. Burritos
  5. Tortilla chips
 that suit our palates ( i mean there will be some indian touches here and there ).I normally dont check any mexican recipes but its inspired taste from the resturants we eat .

Quesadilla:
Quesadilla is made from corn or flour tortillas filled with cheese and sometime veggies and cheese to form a sandwich

Enchiladas:
Enchilada is a wraps/rolls with veggies,meat,cheese in corn tortillas along with roho(red) or verde(tomatillo) or mole sauce(chocolate sauce)

Burrito:
Burrito is a wrap with flour tortillas ,rice,beans /meat.


When we get bored of our regular dinners we used to do mexican varieties.This enchiladas can be made very special with oaxaca cheese which is a mexican cheese and with red /gree sauce covered with some more cheese .Thinking itself i am on cloud nine.

Preparation time:10 min+8 hours (beans soaking time)
Cooking time:30 min
Serves:2



Ingredients:

  • 6 tortillas
  • 1/4 cup tomatillo sauce.

Stuffing:

  • 1/4 cup blackbeans(soaked in water for 8 hrs)
  • 4 large head mushrooms.
  • 1 green chili
  • 1 garlic clove
  • 3 cheese slices.
  • Salt as required
  • 1/4 tsp chilipowder
  • 1/4 tsp cumin powder
Method:

Stuffing:

  • Pressure cook the beans for 4-5 whitles or until mushy .
  • Cut green chili and onions,garlic in to very thin slices.
  • Heat the saute pan and add 1 tbsp oil and saute onion,garlic,chili until onions is translucent.
  • Add sliced washed mushrooms and saute it until it leaves water .
  • Add chili,cumin powder and saute them for a minute .
  • Add cooked mashed beans and add required salt as well.
  • Cook it until it becomes a thick gravy.


Assembly:

  • Heat the tortillas in griddle until soft on both sides.
  • Add stuffing inside the tortillas and roll them and place them inside an oven safe pan.
  • Repeat the stuffing process for remaining tortillas as well.
  • Add tomatillo sauce at the top and add cheese slices above them.
  • Keep it in oven until cheese melts around 5-10 min..

Note:

  • If you have oaxaca cheese you can cut them and place inside the tortillas instead of bean filling or use any non-veg items also 
  • When you take it out of the oven it seems to be little dry so add more sauce if you prefer it saucy
  • You can add roho sauce instead of tomatillo sauce .
  • You can add grated Parmesan cheese instead of cheese slices on the top .
  • Add more cheese if you prefer it to be cheesy .
  • Instead of doing the sauce you can just get a bottle of sauces available in market too.
  • You have to use a spoon to eat it ( i mean you cant eat it like a burrito or Quesadilla)
