This past week my daughter went apple picking with her school mates. She brought home 10 apples. Half of them were rotten and she was kinda sad. To cheer her up I made Carrot and Apple Halwa. She loves desserts and she was so happy that I made this for her. I saw this in kamala's recipes.I tweaked little and Here is the product.

Ingredients:
- 2 apples (ground)
- 1 small carrot (grated)
- 1 cup brown sugar.
- 1 cardamom
- 1 tbsp butter/ghee
- Few cashews for garnishing
Method:
- Chop the apples into 2 inch pieces.
- Grind them using little milk (do not use too much, if you do halwa will take a long time to thicken)
- Grate the carrots fine.
- Heat a heavy bottomed vessel in medium heat add little ghee/butter.
- Add cashews and fry them until golden brown.
- Remove the cashews and set them aside.
- Add the grated carrots.
- Let it cook for 2 min until they are fried.
- Now add the ground apple and cook until all the water gets absorbed(around 10 min).
- At this stage add the sugar and mix it well and reduce the heat to medium-low.
- Stir the halwa mixture periodically until it gets thicker (for about 20-25 min).
- Now add the cardamom powder and mix it thoroughly.
- Add the fried Cashews at end.
- Halwa is ready to be served.
Note:
- To give natural color i added carrot.If you don't want you can avoid it.
- Before adding sugar the water has be dried completely.
- Add sugar and reduce the flame so that it doesn't get burnt.
- You can reduce the sugar, if you wish the halwa to be less sweet.
