Cracked Wheat Sambar Rice | South Indian Recipes | One Pot Meal | Video Recipe

  Cracked Wheat one of the nutritious grain.Cracked wheat also called 'samba gothumai' in Tamil ,'broken wheat' in English and 'daliya' in Hindi.I love broken wheat ,it is such a fibrous grain.We take it at least once in a week.You can prepare  upma,yogurt rice,biryani,payasam,sambar rice,bisibelabath with broken wheat or You can simply cook samba kothumai with 2-3 cups of water and have with yogurt/sambar.

    I normally prepare bisibelabath with cracked wheat ,it is little bit time consuming when you prepare fresh bisibelabath powder.This recipe of broken wheat is so simple ,its a one pot meal because of the use of masoor Dal.If you use toor Dal pressure cook it separate.Also use Pearl onion/sambar vengayam to taste authentic south Indian sambar sadam.

    You can use vegetables of your choice while preparing this sambar rice. The vegetables used for preparing any sambar.I love to add drumstick,carrot,chow chow.brinjal.These vegetables not only flavor the rice ,it  gives aroma while preparing also some nutrients to your diet.Adding ghee for tempering take this broken wheat sambar rice to another level.

Ingredients:
  • 1 cup broken wheat/Dalia/cracked wheat.
  • 3/4 cup masoor Dal/toor Dal/tuvar Dal/arhar Dal
  • 3 tsp sambar powder
  • 1 small gooseberry size tamarind
  • 1 onion(substitute pearl onions for authentic taste)
  • 1 tomato
  • chopped vegetables(1 brinjal,1/4 chow chow,1 potato, 1/4 cup peas).
Temper:
  • 1/2 tsp mustard seeds
  • 1/2 tsp urad dal
  • 1 red chili
  • hing
  • few curry leaves
  • 1/2 tsp fenugreek seeds/vendhayam
  •  1 tbsp + 1 tsp oil
  • 1 tsp ghee.
Method:
    I included video recipe of broken wheat/cracked wheat/daliya/samba gohumai sambar rice for your reference.
  • Soak masoor dal for 10 minutes.By that time chop the vegetables required for sambar sadam.
  • Chop onion and tomato as well.
  • soak tamarind in half cup of water.
  • In a pressure cooker.Add 1 tbsp oil.
  • When the oil is hot add onions and saute it until translucent.
  • Tomatoes can be added now,cook it until it turns mushy.
  • Add chopped vegetables one by one.If the vegetable take longer time to cook add it first.i added potato first(it takes little longer to cook than other vegetables).After adding all the vegetables saute for 2 minutes.
  • Add sambar powder and saute it quick.
  • Its time for cracked wheat to go in to pressure cooker.
  • Now add soaked masoor dal.Add required salt and juice of tamarind.
  • You can add 3 1/2 cups of water now.
  • Pressure cook it for 3 whistles.
  • Wait until pressure subsides.
  • In another pan add ghee and oil.
  • When the ghee is hot add mustard seeds.
  • When it starts crackling.Add urad dal,red chili,hing.
  • Quickly add fenugreek seeds,curry leaves and switch of the stove.
  • Add this tempering to already prepared sambar rice.
  • Cracked wheat sambar rice is ready to eat.
  • Enjoy sambar sadam with yogurt,papad or chips.
