Mango is one veggie which has fiber ,vitamin A,Potassium and lots of mineral in it .Include mango in your diet often.This is family favourite of ours , my mom used to do it and we used to gobble it up. This pickle can be an accompaniment for curd rice or sambhar rice as well as for dosas. The freshness of mango ,little jaggery, chili powder will blow your taste buds away. There are no preservatives and its very fresh so you can give it to kids.

Ingredients:
- 1 mexican mango/mooku manga
- 1/2 tsp jaggery.
- 1/4 tsp fenugreek seeds.
- 3/4 tsp mustard seeds.
- 1/4 tsp chili powder.
- 1 tbsp oil.
- pinch of hing.
Method:
- Grate the mango (some chunks may be there when we grate its ok leave them as is).
- Roast the fenugreek seeds and hing for a few minutes and grind them to a fine powder .
- In a heavy bottom saute pan add 1 tbsp oil.
- Add mustard seeds and let it splutter.
- Add mango and saute it until it looses all moisture(around 20 min)
- After 20 min add required salt around 1/4 tbsp .
- Saute it for sometime.
- Add chili powder and saute it until raw smell goes off(around 20min) in low fire.
- Add jaggery and saute it for sometime.
- Finally add hing and fenugreek powder after switching off the flame.
- You get a dry mango pickle .
- You can accompany it with curd,sambhar rice and with dosas as well.
This mango pickle has to be my fav. I love pickles and sour taste. I have made my version of mango pickle and your recipe is up soon, next Sat for our vegetarian meal.
