Poli/boli/obbattu/puran poli/bobbattu/holige/ubbatti a stuffed Indian flat bread ,unusual like other flat breads, these are sweet stuffed.Method of preparation varies from state to state.Some add sugar to stuffing,some add chirote to outer layer,while some dust it with rice flour,some others dust it with wheat flour,some knead the dough with oil only!!!.what ever method is followed, over all a delicious,sweet,soft,ghee flavoured poli takes you away on your first bite itself.

Pooranam making is not so tough,but little tricky. I melted jaggery and was doing other work so it became so tough to work with.Then next day made coconut poli with sugar.Be careful not to keep jaggery in stove for long time, while removing impurities.Read note section to help yourself in making perfect coconut poli.

How to make coconut poliCuisine: Indian Category: Snacks | Dessert Yields:5 coin poli Prep time: 20 minutes Cook time:10 minutes Total time: 30 minutes
Poli pooranam/Stuffing:
- 1/2 cup grated coconut.
- 1/2 cup jaggery/3 tsp sugar.
- 1 cardamom.
- 1/2 cup all purpose flour/maida
- 3 tsp oil+ oil for rolling.
- ghee for poli's.
- water for kneading.
How to Prepare outer covering for poli:
- Add all purpose flour,oil and water to a wide pan.
- Add water little by little and make it to loose dough.
- Keep it covered for 5-10 minutes.
Lets prepare stuffing for poli:
- Add coconut to tava and saute it until all the water evaporates and coconut becomes dry.You can also pulse it in mixer along with jaggery(you cannot store it for long if you are not sauteying coconut).
- Add little water to jaggery.When the jaggery melts, add it to the coconut.
- Add cardamom powder as well.
- Cook till all of them comes together .
- Divide it in to 5 equal sized balls and keep it ready.
How to make coconut poli:
- Separate the dough in to 5 equal portions.
- Roll the covering or you can make use of your palm to flatten it in banana leaf or plastic wrap(old traditional method).
- Keep the stuffing inside and cover it,like you normally do for any stuffed paratha's.
(i tried with coconut and sugar too)
- When patting with palms,dip your palms in oil then flatten it.
- While rolling the poli,dust it with rice or wheat flour.
- Now to cook ,Heat tava/dosa pan ,add poli to it.
- When it bubbles, flip it.
- When both sides have brown spots place it in a plate.Don't cook it too long,this makes the poli hard.
- Apply oil/ghee ,i added little less ghee.You can do so if serving immediate.
- Coconut poli is ready to be served.Serve it warm or hot.
Note:
- Like i said in ragi roti post ,poli can be patted by hand in a banana leaf or plastic cover.While using banana leaf, place coconut poli on tava after few seconds take the banana leaf out.
- If you are not able to roll/pat the poli apply oil or dust with some wheat or rice flour, this makes the process of rolling/patting easy.
- If you have pure jaggery just pulse it along with coconut then saute this mixture for few minutes(or use it as is).Pulsing makes the stuffing go finer and not to being bitten while eating.
- Karnataka obbattu uses chirote-a fine semolina, along with maida/all purpose flour.
- Puran poli uses some wheat flour.If you are a weight watcher ,then combine wheat flour and all purpose flour.
To store the poli:
- Keep in an airtight container, applying more ghee.This keeps the poli soft when stored for long.
- If you want to store coconut poli try to saute coconut without burning it.This takes away the extra water and keeps the poli for little longer than normal.
- Keep the polis stacked one over the other,this keeps the poli staty soft.
