Keerai Poriyal - a quick side dish made with spinach/greens.Spinach/palak is very good everybody knows that.I know palak paratha, palak paneer, dal palak ,what is this palak stir fry ?Palak is not only for making north Indian dishes/dinner, this green can make a tasty accompaniment for rice too.
Whenever i buy palak i make pasalai keerai poriyal as a side for puli kulambu.I also make keerai kootu with spinach for rasam/sambar rice. palak dal is also our favorite.what i mean is i prepare only south Indian dishes.I rarely make thepla's,paratha, palak paneer with palak.
Stir fry/poriyal can be quick accompaniments for rice. The variation of vegetables in a stir fry is endless.Making of a stir fry is the quickest process(it can be quick than making any upma).Chop the vegetable ,saute with 1-2 red chilies along with tempering, add some salt. That's it.It can all be done before your main dish is cooking.
Like any other stir fry ,if you have the spinach leaves chopped then this poriyal can be done in under just 5- 10 minutes.I buy organic spinach which is already cleaned , i just chop them no cleaning required (he he) .
