Healthy Sambar rice/Bisebelebath

Bisibelabath is one of the signature dishes of karnataka. Every darshini in karnataka serves this dish with some kind of a varaiations. This dish has everything protein,carbohydrate,calcium,vitamin A,starch everything in one meal . It really is a tasty and a filling dish

My mother-in-law is an expert in making bisibelebath. Her version if one of the best if not the best that I have had. She makes bisibele bath whenever we visit them. I just drool when I think about it. Though it is similar to sambar rice additin of special spices makes it very unique. This can be something you do when have guests visiting over. They will be blown away by taste.




Preparation time:20 min (To cook the dal, cut the veggies and to grind the spices)
Cooking time:15 min
Serves:3-4

Ingredients:

  • 2 carrots
  • 10 beans (optional)
  • 1 big size potato.
  • 1 small egg plant.
  • 1 Large onion.
  • 2 medium size tomatoes.
  • 1 cup raw rice.
  • 3/4 cup toor dal.
  • 1/4 tbsp Tamarind paste
  • A pinch of turmeric.
  • Salt as required.
  • 1 1/4 tbsp sambar powder.

To Temper:

  • 1/2 tbsp mustard seeds.
  • 1/2 tbsp Urad dal.
  • 1 red chili.
  • 1 green chili.
  • 1 strand curry leaves.
  • a pinch of asofetida.
  • oil for tempering 

To Roast and Grind:

  • 1 tbsp Fennel seeds.
  • 1 tbsp Split channa dal.
  • 5-6 red chilies.
  • 2 cloves.
  • 2 inch cinnamon stick.
  • 1 cardamom.
  • 1 tbsp grated coconut.(traditional dish uses koparai).
  • 1 1/4  tbsp Coriander seeds.

Method:

  • Wash the rice and Soak in water for 15-20 min .
  • Cook the dal until its soft and mushy.
  • Steam the veggies and set them aside.
  • Dice the onions and tomatoes, make them the same size as the steamed veggies.
  • Roast the ingredients in "to roast and grind" and grind them to a coarse powder once cooled.

  • Add 2-3 tbsp oil in a pressure cooker.
  • Add the items "to temper"
  •  Add onion and saute until translucent.


  • Add tomatoes and cook them until soft.
  • Add the veggies and saute them for 2 min.(they are already steamed ).


  • Now add the sambar powder and add little water .
  • After a boil for 5 min add  rice, cooked dal required salt and tamarind paste.


  • Check for salt and spice.
  • Finally add the ground dry mixture .


  • Cook for 2-3 whistles in a pressure cooker with an additional 3-4 cups water.
  • Finally temper it again with little mustard and 1 red chilly.
  • Your bisebelebath is ready to be served.
  • Serve it hot with raita and/or papad of your choice.







Note:

  • You have to add enough water ,otherwise the rice will be very dry.
  • You have to serve it hot
  • You can half cook the rice and add it instead of adding it raw.
  • Check for heat,salt,tanginess before letting the pressure build in the cooker.

Corn tortillas from scratch/Home made corn tortillas

After a fantastic mexican salsa and juice post today I am posting the tortillas totally made from scratch.
Tortillas are a faltbread made with corn flour like rice flour chappathis (akki roti) in texture ,but more healthier than rice rotis.You can eat it with whatever veggies you have. You can make quesadillas ( A mexican version of grilled sandwich ) by placing a slice between two tortillas and grilling. If there are leftovers you can store them in the fridge and have them later.

I buy fresh tortillas (not frozen) and keep them in fridge and use them within a month. They last a long time.The store I buy them from is little farther from my place. I am too lazy to get it because its getting cold here. So I bought maseca flour from  one of the mexican stores. I tried making tortillas today and they turned out very well.

This recipe asks for tortilla maker. But I dont have one. Find my trick to make tortillas below

Easy mexican recipes/Pineapple salsa/Pineapple juice

Pineapple is a wonderful fruit with an amazing sweet and sour taste. We eat our pineapple as  is or with little chili powder and salt. I have always felt that adding salt and a little chili powder brightens the taste of the pineapple.

Pineapple is a tropical fruit and I have read that Mexico is the largest producer of pineapple.
I love mexican food. We live close to a hispanic neighbourhood and the mexican cusine here is amazing. We are lucky to have a bunch of good hispanics restaurants and grocery stores here. The other day I brought a whole pineapple and half of it was left over. I had this idea of making a pineapple salsa. Salsa is versatile condiment you can use it as a dip or as a topping for main courses or just as a side dish. Enjoy this yummy pinepple salsa.

Tindora fry/Easy sidedish recipe

Tindora or Ivy gourd is also called by different names like the parwal, kundru, tondli in Marathi, Toroda, kunduri (Oriya), kovai, kundri or kovakkai in Malayalam and kovakka in Tamil, Dondakaya in Telugu or also baby watermelon-source varehvah
This Veg helps to reduce the sugar level.I havent heard of this until i get married.My mother -in law used to make this curry .My husband is very much fond of this curry.I started preparing this for his sake .I tried different variations and today it was super yummy because of the powder i added to it and i wanted to share the  recipe with all of you.

Chettinad Vellai paniyaram / Rice fritters.

Vellai Paniyaram is a signature chettinad dish. Anyone who has been to Nagarathar weddings or functions will be well aware of Vellai paniyaram.Vellai paniyaram literally translates to White paniyaram. No Chettinad feast is complete without vellai paniyaram. This dish is not very easy to make and its quite difficult to get the correct texture on the paniyaram. That said, I have included useful tips which would make life a little easier I guess. Usually Achi's use paniyaram rice to make this dish. But I cannot get that here so I used regular raw rice. The perfect accompaniment for this dish is Varamilagai chutney or Tomato chutney

My husband is very fond of this dish and my Mother-in Law makes it a point to make vellai paniyaram and vada whenever we visit. She also makes them during festivals. I made this and vada for Diwali breakfast to keep our family tradition going. My little one really loved this dish and I was very happy.
