Paneer pulao a spicy pulao made with paneer ,rice and spices. Indian cottage cheese is a favorite of most Indians including kids.Its chewable texture makes it the most favorite like soya chunks.Instead of doing curry with cottage cheese making the main course like pulao will make the meal entirely different.To make the pulao extra yummy ,paneer has to be little firm so that there will be a bite otherwise the taste will be like regular rice.

If you have a peas ,mushroom ,chana,tikka masala or butter masala pairing ,that will be a filling and healthy meal for your entire family.Plain raita is a good choice for kids.

- Soak rice for 10-15 minutes.Then drain the water and keep it aside.Cube cottage cheese after washing.Chop red pepper in the same size.Saute paneer with 1 tbsp of oil until you get crispy texture on the sides.Careful not to break them by turning it often.Cottage cheese tend to break in the heat.So be careful.Saute red bell pepper in the remaining oil.
- Add 1 tbsp of oil and ghee to pressure cooker,then add tempering items bay leaf,cardamom,clove.Add thin sliced onions,green chili .After a while add ginger -garlic paste and give a quick saute.Wait until onion turn little brown.Turning brown will make the pulao extra delicious.
- Add mint leaves to cooker ,saute then add garam masala,chili powder,coriander powder.Add rice and wait for a minute.Saute without breaking it.
- Add required water(i added 2 1/2 cups water) then add required salt (i added 1 1/2 tsp salt ).When the water boils taste the water for spice and salt.Pressure cook for 1-2 whistles (don't turn them mushy).You can remove the whistles before the pressure subsides.
- After you remove the whitle,Fluff with a fork.Add saute paneer and red pepper.Give a stir.I made peas and mushroom masala to go with this.It took 1 hour for me to prepare curry and rice.

- 1 1/2cup Basmati rice.
- 2 1/4 to 2 1/2 cup water.
- 1 1/2 to 1 3/4 tsp salt.
- 1 green chili.
- 1 small onion.
- 1/4 tsp chili powder.
- 1/4 tsp coriander powder.
- 1/4 tsp little less garam masala.
- few mint leaves.
- 1 cup cubed paneer(around 200 grams).
- 1 red bell pepper.
- 1 tbsp oil.
- 1 tbsp ghee.
- 1/2 tsp jeera/cumin.
- 1 bay leaf.
- 1 cardamom.
- 1 clove.
- 1 tsp ginger garlic paste.
- Soak Basmati rice for 15 minutes after washing.Drain the excess water and keep it aside.

- Keep it for 1-2 whistles (don't turn them mushy.If you soaked the rice too long then switch off at 1 whitle itself).
- You can remove the whistles before the pressure subsides.
- Fluff it with a fork.Add saute paneer and red pepper to the rice.
- Delicious paneer -red pepper pulao is ready.Serve it with curry of your choice.I made peas and mushroom masala.
