This Vegetable curry (பிரட்டல்) is made almost exclusively with root vegetables. This curry is made with Potatoes, Carrots and Beetroots. Sometimes Cauliflower and Butter Beans do get added. I never really saw butter beans here in the US, but the other day I found them in a Mexican grocery store. Its called fresh pinto beans. I brought some to make this curry.

Ingredients:
- 1 1/4 cup Root Vegetables (I used Potatoes, Carrots & Cauliflower).
- 1/2 cup Butter Beans / Fresh Pinto beans.
- 1 Medium size Onion.
- 1 Small Tomato.
To Grind:
- 2 tbsp Grated Coconut.
- 1/2 Fennel seeds.
- 3 red Chilies.
- 1 Garlic pod.
To Temper:
- 1/4 tsp Fennel seeds.
- 1 inch Bay leaf.
- 1 inch Cinnamon stick.
Method:
- Cook the Butter beans till they turn soft. I cooked them in a pressure cooker.
- Steam Potatoes, Carrots and Cauliflower.
- Chop the Onion and Tomato in to small pieces.
- Grind the Coconut, Fennel, Chillis and Garlic to a fine paste.
- Heat the oil in a sauce pan and temper with Fennel seeds, Bay leaf and Cinnamon.
- Add the onions and saute till translucent.
- Add the tomatoes and cook until they turn soft by releasing their juices.
- Add the ground paste diluted in 1/4 cup of water and saute for 2 mins .
- Add required salt.
- In low heat let the mixture come a boil and let it simmer for 5 mins .
- Add the steamed vegetables and cook until the sauce gets reduced and the vegetables get coated .
- Vegetable Pirattal (பிரட்டல்) is ready to be served.
- You can eat this with Rice, Dosa, Chapathi and Nan bread.
- You can use this as filling for Sandwiches.
Note:
- Dont make the carrot ,potaoes mushy otherwise the dish tastes bad.
- If the red chilies added is not enough add a little chili powder.
- Cook the butter beans well .
