This Egg Curry or Egg Masala or Egg Gravy goes well with Phulkhas/Chapathi. It can be Eaten with Rice/Roti/Dosas.

No grinding required for this gravy but make sure you add enough onion and tomato ,so you get enough curry while serving .

Ingredients:
- 3 eggs
- 1 large onion/vengayam
- 1 1/2 tomato/thakali
- 1 tbsp ginger garlic paste/Ingi poondu viluthu
- 1/4 tsp chili powder(adjust accordingly this gives a mild sweet taste)/Milagai thool
- 1/4 tsp Coriander powder/Malli thool
- little turmeric powder/Manjal thool
- 1/4 tsp garam masala
- few kasuri methi
- Salt as required
To temper:
- 1 tbsp oil
- 1/2 tsp Jeera/Cumin/Jeeragam
Method:
- Pressure cook the eggs for a whistle.Peel the skin and make a cut at top and bottom.
- Chop the onions ad tomatoes very thin.
- Heat tava and add oil to it .
- Add jeera to the rava ,wait until it changes colour or you get a nice aroma.
- Add Onions and saute it for sometime.
- Add ginger garlic paste and saute it until onion turns translucent.
- Add tomatoes and cook them through.
- Add turmeric,chili powder,coriander powder to tava.
- Give it a quick stir.
- Add required water ,Let it boil for sometime.
- Add garam masala ,kasuri methi required salt now.
- Let it cook for sometime until all the masalas come together.
- Finally add the cooked peeled eggs .
- Put it in simmer for another 5 minutes to get a thick gravy.
- Serve it hot with chapathi or roti.
Note:
- Pressure cooking the eggs is very easy compared to boiling in pan.
- You added much water by mistake ?Add a tsp of rice flour to little water .mix it well and add this to curry while boiling .This make the curry thick .
