Ragi Idli|Ragi Flour Recipe

There is a lot to talk about this ragi idli.
  1. Its very healthy one .I hear you!!! you are saying,"i know ".But its more than what do you think .This ragi idli is made with ragi flour and urad dal ,there is no rice.
  2. No need to clean,soak and grind ragi.You can simply use ragi flour.
  3. You can grind the urad dal with a Indian mixer.Even blender works.
       You can make 14 ragi idlies with the mentioned quantity.This is not a instant idli ,you have to ferment the batter .If you want a instant one you can follow the same procedure like making  rava idli.Add curd and rava to ragi and make idlies out of it.But what ever method you do.Don't forget to eat them hot.

Ragi Idli|Ragi Flour Recipe

ragi idli                   Ragi Idli-an alternative to regular south indian idli.

Cuisine: Indian Category: Breakfast Yields:14 idlies Prep time:2 hours+5 min(soaking and grinding) Cook time:15 min(3 batch) Total time: 2 hours 20 minutes


Ingredients:
  • 1/2 cup urad dal soaked for 2 hours and grind
  • 1 cup ragi flour
  • required salt
Method
Preparation:
  • Soak urad dal for 2 hours.

  • Grind it to a smooth paste (indian mixer,wet grinder,blender works).

  • Add required salt and ragi flour.
Add ragi flour,water ,required salt

  • Add required water and bring it to dosa batter consistency(because the batter gets thick when it ferments).
  • Ferment it for 8 hours or overnight.
Cooking:
  • Check the batter consistency.If its thick add more water and mix it well.(if you are adding water and mixing it the idlies will be little hard).
Fermented ragi batter
  • Get the idli mould ready by greasing it with oil.
  • Add ragi batter to it up to 3/4 full(because it will raise when its steamed).
Add ragi batter to moulds

  • Steam it until its done or a toothpick comes out clean, when poked in center.
Steam it for 5-8 minutes or until a toothpick comes out clean

Note:

  • You can poha /aval to make the idli's more softer.
  • Instead of poha you can add sabudana/javarisi too for softness.
  • If you want to add rice.Soak 1 cup separate and grind separate.Finally mix urad dal batter,rice batter and ragi flour before fermenting.
