Vegetable Fried Rice Recipe | Indo Chinese

     There are many items in indo-chinese.Vegetable fried rice will be a quick and healthy and really tasty too,among others.I will try to make and post more indo chinese in future.I have a love towards noodles and fried rice .I prefer ordering them when we visit near by restaurants.
    Kids too love these different rice variety,don't like regular sambar,rasam. They  should love their lunch boxes,not to bring anything back?.By making these vegetable fried rice you definitely can achieve the above goal.

Carrot Curry | Chettinad Food

     Carrot Curry-a mild comforting curry with fresh carrots and toor dal along with some tempering.Commonly called "tuvatal" served along with rasam or sambar rice in chettinad.
       In chettinad varieties of veggies are served .Pachadi-tangy curry(with toor dal and with veggies like lady's finger,raw mango),Kootu-mild curry ( made with veggies like choyote,snake gaurd,cabbageand spiced with green chilies),Tuvatal-stir fry (with or without coconut also with or without toor dal made from veggies like carrot,snake guard,green leafy veggies),Masiyal-mild curry (from veggies like spinach but when made with yam it has tamarind pulp).Kola(dry blend of fresh veggies, dal and spices).Piratal-Mixed spiced veggies(steamed veggies cooked in ground coconut ,spice paste or simply with spice paste).Varuval-dry curry(shallow roast of spiced veggies) there is still more ,but with this intro i would like to go for the recipe of carrot curry straight away.

Tamarind Rice(Step By Step Pics)

       Tamarind Rice/Puliyotharai/Puli Sadam is an easy variety rice dish made with tamarind pulp or tamarind paste. My mom uses tamarind paste. The aroma of the dish is fresh and good if the paste is made fresh.
       Tamarind rice is very famous in South India especially in vaishnava temples where it is a standard prasad offered to god.
      In India its common to prepare this puliyotharai mix and store it in the refrigerator .When in need, cook some rice and mix with puliyotharai paste. The puliyodharai paste keeps well so you will see a lot of students bringing this from their homes.
      I added black tamarind (tamarind turns black when it ages) that's why tamarind rice is black even though i added enough turmeric.When you add lighter colour tamarind (which is not so black) tamarind rice will be yellow in colour.
   
Papads or simple potato curry is good for this Puliyotharai rice.

Curd Rice/Thayir Sadam

      "Rice" being a staple south Indian Food, we need variety of rice dishes .Variety varies from delicious  "biriyani" to simple "tomato rice" .Curd rice is the easiest of all rice varieties.Some people even think ,why  are you giving the recipe for this rice ?Some times easy recipe gets faulty and the day got ruined because of not getting the simple  "Yogurt" rice .The trick is you have cook the rice mushy and cool it down before you add curd to it .If the curd is too tangy you can add little milk to get right taste.
 Some common names of this rice "mosaru anna" or "bhagala bath" in Kannada,"Yogurt rice "in telugu .Its commonly called as "thathi Annam" in Tamil Brahmin's community.

Moru Curry(Step By Step Pics) | Mor Kulambu

         I have a love towards mor kulambhu/Moru Curry and avial .I tasted Moru Curry when i was in my uncles house Chennai .I  did avial many times after i got married . This moru curry, i never tried .While i was going through a recipe book i mentioned about, i saw this moru curry with ash gourd recipe there and want to try immediately . I did the curry previous week.After i ate  ,my hand smelled like heaven .Just loving this Mor Kulzhambhu .
    Moru Curry and Beans paruppu usili is a very famous combo in Iyengar house.But we do Beetroot Usili(beetroot kola) as a sidedish(Instead of beans we use beetroot).
        I added just 3/4 cup of yogurt and 3 green chilies opposed to 1 1/2 cup yogurt and 4 green chilies mentioned in the book ,Thinking of it will be more for 3 of us .After we ate lunch  so much of  kulambhu was remaining so we had with dosa and it tasted amazing with dosa too  .If  you want  gravy/kulambhu to be tangy, use the day before yogurt .If you are making this curry for more than 4 people increase the yogurt and chilies used. you might want to increase coconut used as well .

Mor Kulmabhu

Preparation time:10 min
Cooking time:10 +15 min
Serves:3-4

Ingredients:
  •  200 grams ash gourd/poosani kai
  • 1/4 tsp turmeric powder
  • 8 red onions/shallots
  • 1/2 tomato/Thakkali.
  • 3/4 cup yogurt/thayir

To temper:
  • 2 tbsp oil
  • 1/2 tsp mustard seeds
  • 1/2 tsp jeera/Cumin seeds
  • few curry leaves/Karuvepilai
To grind:
  • 2 tsp grated coconut
  • 1 tsp jeera/Cumin seeds
  • 3 green chilies/Pacha milagai
  • 1 tsp toor Dal/Thuvaram parupu
  • 1 tsp Channa Dal/Kadala parupu
  • 1 tsp raw rice/Pacharisi
Method:
  • Soak Channa,toor Dal and raw rice for sometime and grind it along with jeera,coconut,chilies.

Grind all items with coconut and chilies

  • Clean the ash gourd and cut it in to small pieces.

  • Pressure cook it along with onion and tomato for a whistle .
  • In a pan add oil and add the tempering items when tava is hot .
Tempering

  • Add turmeric powder as well .
  • Add the pressure cooked ash gourd and ground paste .
  • Add the required salt and let it cook until it becomes thick .
  • Make the yogurt to butter milk by churning it.If its too thick add little water .
Churned yoghurt

  • When the gravy is thick, add the thick butter milk .
Finished gravy

  • When the gravy boils switch off the flame .
  • Serve it with rice and parupu usili .

Biryani/Vegetable Biryani(Step By Step Pics)

             To cook a perfect biryani is very hard(at least to me). In Tamilnadu muslim Biryani is very famous. Most popular biryani joints have a version of Muslim biryani. Going to India every time to eat good biryani  is out of the question but in this social media world we can accomplish anything right?
            A small story about biryani .. right after our graduation a good friend of mine got married . He was the first person from our batch to get married , many of us attended the marriage. This was a muslim wedding mind you and people were drooling about the biryani lunch. But little did I know that it would only be a Biryani lunch with sides and desserts of course. As you guys know I am a hardcore veggie and I expected a few veg dishes. Any ways to cut the long story short few friends of mine went to a local joint and got me some veggie food. All my friends made fun of me saying that I was the first and only person who ate a veggie lunch in a Muslim wedding!
       Coming to the biryani, I am no expert in biryani cooking. My husband makes a super tasty Vegetable biryani. This time he made it in a pressure cooker and I captured it. Pressure cooker Vegetable Biriyani was so tasty .

Some easy one pot meals
  1. Mushroom fried rice

Vegetable pulov/Easy Onepot Meal using pressure cooker/Lunchbox ideas

           "Pulao" is made of coconut milk or ground coconut without any mint leaves .My mom makes this pulo very often when we run out time or we have lot of vegetables left in our pantry.
       .If you have some left over veggies at the end of the week you can do this and you feel your meals is so special .Even cookng time for this is very less with the use of pressure cooker .Such a easy and healthy pulao ,you don't even need any raita for it .Just scoop in the rice and your tummy asks for more .

LongbeansStirfry


I Never saw this bean variety before,it happened  to me one fine day .I was surprised to see it and i got it with a curiosity how it will be  .I guess they taste a bit different from our regular curry beans and  taste similar like "asparagus" which i never tasted .You can add some peanuts while tempering if you like little crunchiness while eating this veggie .
Its called long beans but according to me the taste is little different than our regular beans .When i searched for it wikipedia says Its also called "yard long beans","Chinese long beans" ,"Pea bean" ,"Snake bean".
I am returning to my schedule slowly and will be posting as usual very soon .So until then please be patient.

Broccoli Pepper Fry | Indian Broccoli Recipe

     Hello readers and friends, its been long since I posted.We were on vacation, before leaving on vacation I thought I would share some recipes from India,That is impossible!!! I spent most of the time with my family. I visited them after 2 long years. Apologies for not posting a single recipe at that time. We came back a few days ago.I had to start my usual chores,of course posting too.Finally I edited post of this broccoli pepper fry recipe.
    This broccoli pepper fry is a simple broccoli recipe made with just pepper and jeera.Pepper and jeera is added in oil just before broccoli,to get a smoky taste in the fry.You can say this broccoli is prepared in Indian style.Roasted pepper/jeera gives a unique  taste to broccoli fry.I do cauliflower pepper fry this same way.So if you don't get broccoli you can make this pepper fry with cauliflower.

MethiDhal/FenugreekLeavesDal/VendhayaKeerai

Spinach dhal,Simple dhal or whatever dhal it is ,its so yummy .I love andhra style dhal ,that too when its served in nandhini ,i can have the whole meal only with dhal as an accompaniment for rice.The amount of ghee they serve along with the dhal makes it even more yummier.I usually do dhal very often to include mung dhal in our diet .Because we south indians dont do much varieties with mung dhal except kootu that too with added kadala parupu .But andhra cooking has lots of dhal varieties this dhal .
This methi dhal  is very easy to make and it goes well with all the mains you make like idli,dosa,idiyappam ,roti,chapathi,rice etc . so i call this one as  all in one dhal
When you add some green to dhal kids dont see them much or cant throw the greens away .So this can be  better way to include greens to your kids diet .Do try it  and let me know how your family loved it .

KondakadalaiSadam/KalaChanaChawal/BlackchannaRice

           Black chana(black chickpea/kondakadalai/kalachana) has more nutritional value than white chana its very good for your eye health( my grandmas word).I do chana kulambhu ,gravy for roti etc.One day i just don't want to do my regular recipes ,was searching for recipes and found the perfect recipe of chana rice in priyakas blog .Believe me in a span of 3-4 weeks i did this rice almost 3-4 times and we all love it a lot .Its just perfect for tiffin box- a filling nutritious meal for your loved ones in their boxes .When you sprout the channa then you get the whole grain value too.So protein,fibre,vitamin ,wholegrain,carbohydrate in one meal ...So good .With some yogurt,karasev,papad you are ready for lunch .let see how i did the rice.

Mushroom FriedRice/Simple friedrice/Indochinese recipe

We are very much fond of fried rice .We usually get it from nearby chinese shop (they use much oil and many sauces )when we are craving for fried rice..I sometimes do it at house but was not getting the same taste as we get in chinese shop .But homemade fried rice has less oil and no much sauces in it .If you are craving for fried rice or lazy to do anything for a weekend lunch/brunch, this rice very much .
Very simple rice which has got lots of mushroom flavors .This is not authentic chinese fried rice for two reasons ,one -the rice used is basmati rice and second -has no chinese sauces except soy sauce and hot sauce which is basic for indo -chinese fusion recipes .Next time i want to try adding some rice-vine vinegar and see the taste matches chinese fried rice  .
I used baby bella, you can substitue with regular mushrooms at hand and for hot sauce you can add some chilipaste (i am not sure about this but give it a try ).If you have some leftover veggies you can make a vegetable fried rice too.

RawBanana fry/Easy sidedish/எண்ணெய் வாழைக்காய்

Banana tree is one useful tree from top to bottom. In India Banana leaf meal is very famous and it has many healthy benefits too. Banana flower is used for making vadas and dry curry which is very nutritious (has iron and helps in getting regular periods ). Banana stem can be served as a dry dish and with dal. Ripe bananas we eat everyday and it has lots of pottasium which is good for high blood pressure .Raw bananas can be fried, or with besan flour it can be made as a yummy evening snack . So when you have a backyard why not grow banana tree .

I usually do variations on banana fry one is directly adding in oil. Other one is this ,Boiling the bananas in water to give a soft texture and later frying (not deep fried) in oil. This method works faster and has less oil compared to the other method.

First time when I ate it in my aunts house I became a fan. From that time I wanted to try and make this dish in my house. When I did this I was excited and was happy with the result.
 This goes very well this sambar and curd rice.

Snake Gourd Curry/Easy SideDish Recipe/புடலங்காய் துவட்டல்

Snacke gourd is a gourd which got its name from its look and they are climbers like other gourds.Some common names of the pudalangai include "serpent guard" ,"padwal" in telugu its called "potlakaaya" ,in kannada its called "paduvalakaayi " ,in bengali its called "chichinga",in nepali its called "Chichindo",in oriya its called "chhachindra".
 Snake gourd has many benifits :its good for diabetics ,it relieves constipation ,it get the mucus out of respiratory system as a natural anti- biotic .While consuming the snacke guard remove the white center part with seeds .Consuming of seeds can cause indigestion problems .
Compared to other similar vegetables like chinese okra this is easy to cut and consume (according to me ) .You can eat it as a salad with little pepper and lemon juice as well ,by then you have to cut them in to very thin slices  .You can prepare it as a semi liquid gravy by pressure cooking it with dals and green chili.Will gradully post other recipes soon ..

All in one dal /Palak dal/Spinach dal

Palak is a very healthy green which has all the good for a healthy body .Mainly it is  iron rich and has more dietery fiber like other green leaves.It has more vitamin A good for eyesight and prevents oral and lung cavities cancers.It has more vitamin k which is good for bone strengthening activity .Fresh greens has good amount of vitamin B and Vitamin C .For more details about the health benefits of this green vegetable click here.
Whenever i buy palak i used to do this dal because my husband likes this much .This has all the nutrition you want for a day and its very tasty too .So dig in ...

Rasam Recipe/Tomato Rasam

      Tomato Rasam is a flavourful soup with tomatoes ,spices,tamarind cooked in low flame.There are many rasam recipe variations like puli (tamarind) rasam,lemon rasam,paruppu(lentils) rasam,pineapple rasam,Kollu(horsegram) rasam,Tomato rasam.
     Among all of the above i do only 2-3 rasam recipe variation.Rasam especially served for breastfeeding mothers and toddlers..I sometimes avoid tamarind and use lemon/lime instead.Whenever there is non-veg items in home my mom defenitely makes this Tomato rasam.
    This Tomato Rasam has pepper which aids digestion ,Jeera  which soothes stomach....But whatever variety of rasam you prepare it is very very light .
    You can use rasam powder which is more easier when you are in a hurry preparing meals for lunch box.But instant rasam is more handy when you don't have rasam powder .
